Who is Toby?
Toby Smith is the founder of Toby’s Estate. Over 15 years ago, he gave up his career as a lawyer and ventured into some of the world’s most remote regions to learn everything he could about coffee, from seed to harvest. After stints with plantations in Brazil and Guatemala, Toby returned home and began roasting beans in his Mom’s garage in Sydney. He has since become the backbone of specialty coffee and direct trade in Australia. More than a decade after he opened his first cafe in Sydney, he continues to push boundaries and devote his efforts to roasting and serving the best coffee possible.
